Ingredients: 2 cups Watermelon, diced small 1 cup Fresh Mozzarella (I like the pearls) 1/2 cup Red Onion 1/2 cup Basil (chiffonade) - Chop up to your liking; optional 1/4 cup Extra Virgin Olive Oil Juice of 1 lemon, lime and orange Pinch of salt, pepper and cayenne to taste Balsamic Glaze (to finish) - found in grocery store Watermelon has diuretic properties which means it helps to flush the kidneys and urinary system.
